This yummy vegan chocolate mousse is so good your kids (and guests) will never know that it was made from avocados. This recipe was shared with me by a SUPER fabulous MAMA who has 3 kids and is dedicated to giving her kids yummy goodness.
I made it and brought it to my friends place in some beautiful little ramekins. It was loved but actually a little on the sweet side so next time around I am going to try putting much less maple syrup and doing little taste tests as I go along to find the perfect amount.
For every 1 avocado used
1/4 c water
1/8 c maple syrup
1/4 c cocoa
1 tsp vanilla
Soak dates in boiled water for 20 min. Remove from water. Peel and pit dates.
In blender, vitamix or processor:
Blend dates and water until smooth paste. Add maple syrup and vanilla. Blend until mixed. Mash avocado and blend until creamy and well mixed. Finally, add cocoa and mix until incorporated. Scrape sides a few times.
Transfer to airtight container.
Chill for 3 hours.
Will keep for up to 3 days.
Works great as icing for cakes! Absolutely amasing with fresh raspberries.
If you 4 x the recipe to make everything 1 cup it will serve 6-8 people.
